Green Pizza with Pesto, Peas & Gut Health Micro Mix

This Green Pizza is a celebration of chlorophyll, crunch, and calm digestion. Think crispy flatbread, rich green pesto, sweet pops of peas, and a sprinkle of gut-loving microgreens. It's fresh, light, and totally satisfying. Ideal for that Friday night glow-up or a colorful weekend lunch.

Ingredients (serves 2):

  • 1 large sourdough flatbread or spelt pizza base
  • 3–4 tbsp homemade pesto (see below)
  • 1 cup blanched peas (fresh or frozen and thawed)
  • A handful of rocket or baby spinach (optional, for extra green layers)
  • 2 tbsp grated Paramazan (or vegan alternative)
  • A generous handful of Gut Health Micro Mix (pea, sunflower, mustard, coriander)
  • A drizzle of cold-pressed olive oil
  • Optional: lemon zest, chili flakes, cracked black pepper

Pesto (makes a small jar):

  • 1 cup fresh basil leaves
  • 2 tbsp pumpkin seeds (or pine nuts)
  • 1 small garlic clove
  • Juice of ½ lemon
  • 2–3 tbsp olive oil
  • 1 tbsp nutritional yeast (for cheesy flavor)
  • Pinch of pink salt

Blend until smooth but still textured. Store leftovers in a sealed jar in the fridge for up to 5 days.


Assembly:

  1. Preheat the oven to 200°C.
  2. Spread the pesto generously over the pizza base.
  3. Layer on your peas (and spinach if using).
  4. Sprinkle with Paramazan or its vegan cousin.
  5. Bake for 8–10 minutes, just enough for the base to crisp and the top to warm.
  6. Remove from the oven, drizzle with olive oil, and top with the Gut Health Micro Mix.
  7. Finish with lemon zest, chili flakes, or a twist of black pepper if desired.
